John Danielson spent his career working his way up the corporate ladder at Albertsons before retiring and making wine in his native Idaho. He used Skyline and historic Symms vineyards to produce a classic cool-climate Cabernet Sauvignon that should stand the test of time. It opens with aromas of black cherry, boysenberry and plum, backed by hints of crushed walnut, chocolate, vanilla and black olive. The fluid is smooth with black cherry, black currant and more plum. Gobs of acidity and slaty tannins give it tremendous length as it transitions into a finish of golden raisin, sarsaparilla and cocoa powder. Next month, the Vale wines will be available at the Hat Ranch tasting room on Caldwell’s Sunnyslope Wine Trail.
