Christopher Castillo, a graduate of Walla Walla Community College’s viticulture and enology program, focused his attention on acclaimed Phinny Hill Vineyard in the Horse Heaven Hills for this blend of Cabernet Sauvignon (46%), Malbec (27%) and Merlot. His use of French oak (54% new) presents an undertone of baker’s chocolate, vanilla and char within the aromas of black cherry, strawberry taffy, rose hips and rosemary. The drink is one of plums, blueberry, cherry and pomegranate with a structure of rewarding frontal tannins and a long farewell. Enjoy with short ribs influenced by paprika. The wines are available at his family’s winery in Milton-Freewater, Ore., as well as its Woodinville tasting room.
