Woodinville winemaker Kevin Correll has proven himself to be a fast learner with Cabernet Sauvignon, producing this ageworthy bottling a year after he earned an enology certificate from University of California-Davis. His product of Red Willow, Destiny Ridge and Stillwater Creek vineyards isn’t showing any signs of slowing down, opening with youthful aromas of boysenberry, plum and cherry taffy with touches of rose petal, slate and toasted coriander. It’s distinctive and complex on the palate, featuring flavors of huckleberry jam and cherry, backed by sandy tannins and pomegranate acidity. The finish of dark chocolate and whiff of smoke are hints of 27 months in French oak barrels, half of them new.
