Owner/winemaker David Volmut learned his craft at Yakima Valley Community College before opening his winery in the Olympic Peninsula town of Sequim. This might be his best wine to date. It’s a blend of Barbera (66%), Dolcetto (19%), Cabernet Sauvignon (12%) and Nebbiolo from four different appellations. It offers aromas of horehound candy, chocolate, dark berry and spice, followed by flavors of black licorice, blackberry, red currant and pomegranate. It’s really delicious, and the tannin doesn’t really show up until the finish, where it gives the wine plenty of length.
