A sybarite’s dream, Bob Bertheau allows these heavy clusters at Cold Creek Vineyard to hang until desiccation begins, blended them with prized StoneTree berries (45%) and funneled that dense juice into a barrel program of 93% new French oak. That begins to explain the oak-dominated aromas of roasted coffee beans, fresh-baked brownie, simmering ground beef and tar. It’s a fruity and sensual drink of black cherry, plums, blueberry and white chocolate, backed by fine-grained tannins and ample perceived acidity — despite the rather lofty pH of 3.9. Suggested pairings include Butternut & Cougar Gold Pizza.
