Soil scientist Joan Davenport wrote the American Viticultural Area petition for this remarkable sub-app in the Yakima Valley, which she and winemaker/husband Gordon Taylor can see from their winery in Prosser, Wash. They harvested this Spanish variety from Upland Vineyard on Oct. 19, which made for a lighter-style Temp that carries a theme of high-toned red fruit of red currant, Van cherry and strawberry/rhubarb compote, accented by sarsaparilla, caramel, bell pepper and earthiness. Suggested pairings include paella, stuffed pork chops and moussaka.
