The blend of Chardonnay (63%), Pinot Noir (19%) and Pinot Gris create aromas of baked bread, poached Asian pear, Golden Delicious apple, lemon zest and white button mushroom. There’s a clean and bright start to the flavors of fresh apple and ripe Bartlett pear, which features a round frothy mousse on the midpalate — 18 months of surlie aging — and pleasing acidity for length, which more than balances the residual sugar of 1.3%. Suggested fare includes clam dip and sashimi.
