Doug and Jo Ann Fries founded and own this Dundee, Ore., winery, but they spend part of their summers living near their 480-acre estate vineyard on Washington’s Wahluke Slope, a warm region known to produce some of the Northwest’s most stunning Syrah. Alluring aromas feature black plum jam on toast, dark chocolate, forest floor, horehound and mincemeat pie spice. The drink is plummy, meaty and minty amid moderate tannins. It’s backed by dark chocolate and boysenberry acidity, a sign of the Barbera (3%). Pairing possibilities include pulled pork, Duck Confit or elk.
