Sergio Martinez has tended vineyards in Washington’s Horse Heaven Hills for more than 30 years, and his son, Sergio, now makes award-winning wine with them for their family business in Prosser. Tropical aromas of lemon oil and coconut are met with notes of fresh-cut pear and toffee, a sign of the 30% new French oak used. What follows are flavors of butterscotch, poached pear and spices found in a souk market. The mouth feel begins with richness before gathering up zesty acidity and a bit of tannin in the lengthy farewell that comes with a hint of saffron. Try this with seared scallops.
