47. Seven Bridges Winery 2010 Echo West Vineyard Cabernet Sauvignon, Columbia Valley, $50

Lloyd Piercy’s vineyard northwest of Pendleton, Ore., has been the secret sauce behind some remarkable reds over the years. Here, it gets the spotlight. They’ve preserved characteristics associated with the variety via notes of red bell pepper, black cherry, blackberry, black pepper and a stroll through a humidor. On the attack comes an explosive entry of black currant, dark strawberry and dark chocolate. It’s a plush, rich and elegant drink that’s capped by cordial cherry and allspice notes.
