Cave B Estate Winery 2011 Chardonnay, Columbia Valley, $25
Walla Walla Community College winemaking product Freddy Arredondo pulls off a delicious juggling act with this Chardonnay that features fruit, oak and creaminess while still delivering the critical food-friendly acidity. Apple, pear, butterscotch candy and vanilla spice aromas include a hint of minerality. Its entry to the palate is rich, rounded and yummy with pear, toast and more butterscotch, backed by Golden Delicious apple and finished with lingering acidity. Suggested pairings from Cave B’s on-premise restaurant — Tendrils — include smoked trout with wilted greens and a creamy sunchoke purée. This wine received a silver medal at the 2014 Seattle Wine & Food Experience Wine Competition.
