Owner/winemaker Keith Pilgrim has fashioned an estate Cabernet Sauvignon — which he harvested Oct. 11 from 16-year-old Salmon Safe vines on Red Mountain — that’s dark, dense and decadent. His opulent approach of 32 months with French oak (74% new) creates the mood with tones of dark chocolate, cocoa powder and espresso backed by black currant, red cherry and plum.
