Six clones from five north Willamette Valley growing regions created the palette for Byron Dooley, who makes his wines in McMinnville, Ore., and sells them in downtown Carlton at a tasting room he shares with his wife’s Honest Chocolates. His use of 25% new French oak develops a nose that hints at milk chocolate and caramel, backed by plum and boysenberry. Those barrel notes are pushed into the background on the attack, which features juicy strawberries and Rainier cherries. Dark plums and plum skin tannins appear in the finish.
