Underwood Mountain Vineyard, north of Bingen, Wash., is one of the state’s most underrated sites for cool-climate varieties. This young Woodinville winery reaches into this steep-sloped planting for its Riesling that brings aromas of apple, watermelon, lemon bitters and Scotch Tape. Inside, it’s rounded, rich and filled with sweet fruit flavors of pear, orange juice and Uncola, backed with ample acidity to balance the residual sugar of 3.7% The low-alcohol Riesling earned a silver medal at the 2014 Seattle Wine & Food Experience Wine Competition, and pairing ideas include Riesling and Chutney Spinach Salad, a recipe courtesy of Spokane cookbook author Ellena Conway.
