Brian Denner designs this in the style of a Vouray using fruit from the estate Varner-Traul Vineyard in Talent, Ore. The result of his mostly stainless steel approach brings a nose of peach blossom, cantaloupe, spun sugar and lemongrass. Inside, the mouthwatering structure is laced with white peach, Granny Smith apple and lime. What has been left of this production by their admiring wine club is available at their Le Petit Tasting Room in Central Point and online. They suggest pairing it with their recipe for Scalloped Potatoes.
