There are subtle differences between this Brut de Brut and the 2010 Brut at this Lake Chelan bubble house. The blend is the same — Chardonnay (55%), Pinot Noir (36%), Pinot Meunier (9%) — and the time spent on the lees also was 24 months. It comes down to the dosage. Here it was just 0.12% residual sugar, and it plays out virtually just as dry as the remarkable Brut (0.05%). Tones of Gala apple, Asian pear and fresh-baked brioche with touches of creaminess, minerality and almond make this a serious and pleasant sparkling wine. The food applications seemingly are endless.
