This elite and historic site, targeted by late Dr. Walter Clore for Ste. Michelle, continues to produce one of Washington state’s most consistently delicious — and accessible — Cabernet Sauvignons. Aromas of dark purple fruit hint at blackberry milkshake and boysenberry syrup, backed by black licorice and hints of forest floor. Inside comes a creamy entry of dark plums, dried cherry and sweet blackberry. Sandy tannins are featured in the rich midpalate that leads to a remarkable finish. Suggested pairings include veal, tomato-based pastas and a beef roast rubbed with rosemary and cracked pepper.
