The Conway family recently began spotlighting this Columbia Basin vineyard for some of its aromatic whites in its lineup, and this continues that theme with aromas of baked apple, butterscotch, alder smoke, dustiness, gunmetal. Flavors reminiscent of baked apple pie and poached pear dominate, complete with cinnamon and vanilla bean. There’s ample acidity to balance the residual sugar of 2.5%. The family matriarch, Ellena, enjoys serving this with her pork chops that include apples and shallots, a recipe that’s included in her latest cookbook — which is available at their Spokane Valley tasting room.
