Flavors reminiscent of baked apple pie and poached pear dominate, complete with cinnamon and vanilla bean. There’s ample acidity to balance the residual sugar of 2.5%. The family matriarch, Ellena, enjoys serving this with her pork chops that include apples and shallots, a recipe that’s included in her latest cookbook — which is available at their Spokane Valley tasting room.
