She crafts it in an approachable, food-friendly style that starts with aromas of fresh-mowed grass, gooseberry, lime peel and kumquat. She manages the mouth feel of this high-acid variety with a program of 40% barrel fermentation in attenuated oak, allowing for a refreshing entry of Granny Smith apple, gooseberry, quince and slate.
