Sparkling wine for Thanksgiving

Karma Vineyards 2010 Brut, Columbia Valley, $50

karma-vineyards-logoIn 2006, the Pittsingers established their winery in Lake Chelan as a tribute to their children and to sparkling wine, and their latest releases of vintage bubbles rank among the most serious and best in the Pacific Northwest. Their cave-aged cuvée of Chardonnay (55%), Pinot Noir (36%) and Pinot Meunier spent two years on the lees, and it’s showing gorgeous toast notes of biscuits and dough with delicate fruit aromas of lemon, pear and starfruit with minerality. Texturally beautiful foamy bubbles brings out the explosive acidity and clean flavors of Granny Smith apple, lemon juice and gooseberry. The food pairing possibilities with this bone-dry bottling are endless, but Karma’s on-premise 18 Brix Restaurant offers up this recipe for Italian Flat Bread.
