In her previous life, Heidi Noble showcased her culinary skills in the kitchens of some of Canada’s top restaurants before she moved to Vancouver and became a sommelier. She continues to keep food applications in the back of her mind while working in the cellar with her wines. This Gamay, farmed from nearby Deep Roots Vineyard on the Naramata Bench, takes on a dark, stormy and earthy approach with its tones of plum, currants, blackberry, toast and vanilla bean. It picks up gamy and savory notes in the finish, along with a pinch of sage. Suggested pairings include smoked black cod, barbecued ribs, mushrooms and steak fries.
