After 15 years with this elite winery focused on red Bordeaux varieties, Jean-Francois Pellet got his chance to dive into a white grape under this label — Sauvignon Blanc from Seven Hills and Les Collines vineyards. And he played around very successfully with grapes picked during the second week of September and dropped into used French oak barrels (50%), stainless steel (20%) and concrete egg. Aromas of pineapple, yellow grapefruit, Granny Smith apple and lemongrass turn into clean flavors of dried papaya with yellow grapefruit, backed by lime peel. And his fans lapped up nearly every drop within six weeks of the wine’s June release.
