Ohio native Ray Curtis cut his winemaking teeth 30 years ago on mead, and he’s found a following for it in the Washington state capital of Olympia. He builds several styles off the raspberry honey he buys from Lewis County beekeepers, and this one checks in at 7% residual sugar. It’s ambrosial with notes of clover honey, alder-smoked bacon and agave nectar, finished with a liberal dash of baking spices.
