Puget Sound vintner Howard Rossbach and his longtime Oregon winemaker at Firesteed, Bryan Croft, further their approach to bottle-aged Pinot Noir with this latest version. Recently released after seven years in the cellar, it shows both maturity and food-friendly finesse, starting with aromas of red cherry, raspberry and pomegranate with bittersweet chocolate, moist earth, minerality and woodruff. The wealth of acidity and modest tannin structure have been preserved, as have flavors of strawberry, cherry, cranberry and pomegranate. Enjoy with stuffed lamb or duck breast in a cherry sauce.
