Two Mountain Winery 2012 Copeland Vineyard Cabernet Sauvignon, Yakima Valley, $28
Matthew Rawn makes the wine, and brother Patrick oversees the vineyards for the Zillah, Wash., brand they launched in 2002. Their use of 55% new oak for this lot from their estate creates a mood of chocolate and black licorice with dark plum and pomegranate aromas. That purple fruit profile runs deeper on the palate with well-integrated tannins and blueberry acidity, a profile that should serve it well alongside pork and venison as well as lean beef.
