The Middleton family, owners of Cadaretta in Walla Walla, continues to move ahead with this consumer-minded line they’ve named for the little-used, painstaking vineyard practice of protecting vines from Arctic blasts. Brian Rudin oversaw the production of this rather complex Chardonnay, which invested in a barrel program of 35% new French oak and sent lots through 40% malolactic fermentation. Aromas of light toast, starfruit, white peach and lemon curd transition to brisk flavors of Asian pear and apricot. It’s presented in a dry style with low oak, backed by minerality and Granny Smith apple peel bite.
