Keith Pilgrim began to develop Terra Blanca in 1992 and his Salmon-Safe estate program on Red Mountain continues to mature, and he aged this in nearly 100% new French oak barrels for 32 months in his remarkable cave. There are ripe and dark fruit aromas of black currant and Bing cherry, backed by Aussie black licorice, cinnamon, cedar and red bell pepper. The core of the palate is luscious and sweet with boysenberry, black cherry and red currant. Well-managed tannins and ample acidity are capped by a lick of cherry candy. Pairing options include The Drunken Pig pizza — featuring smoked bacon, capicola, prosciutto, pepperoni, Dorset cheddar and red wine-influenced red sauce — at the Pilgrims’ Vineyard Grill, which is open on weekends.
