Walla Walla winemaker John Freeman continues to produce wines of distinction at approachable prices, and this blend from seven sites — including underrated Doval Vineyard on the Wahluke Slope — rates as one of state’s best yet expressions of Cab from the 2013 vintage. A whiff of alder smoke leads to hints of black currant, black cherry, plums on parchment paper and chocolate shavings. The palate show impeccable balance with ripe, smooth and dark tones of black cherry, plum and dark chocolate swirl amid herbal tea tannins, blueberry acidity and vanilla. Precept culinary director Andrew Oldham suggests serving this with roasted rosemary lamb, pepper-crusted steak and grilled vegetables.
