Northwest Wine Academy graduate Josh Stottlemyre has focused his Viognier production on one of Washington state’s oldest sites for the white Rhône grape — Elerding Canyon Vineyard near Prosser. His dessert style with that variety flashes intense aromas of marshmallow cream, vanilla bean, cotton candy and ambrosia salad, backed by peach cobbler, honey and peach skin. The residual sugar of 6% allows this to pair nicely with fruit-based desserts and light cheesecakes.
