Flint Nelson has been one of Washington’s most prominent promoters of co-fermenting Syrah with Viognier, which makes up 8% of the blend from Kestrel View Estates Vineyard in Prosser. It creates aromas of blackberry cobbler with vanilla, backed by dark chocolate, toast, smoked sage and mincemeat spices. The drink is dark and dense with a continuation of blackberry and rich blueberry flavors amid a mild tannin structure and bright pomegranate acidity. Suggested fare includes barbecued ribs, pork and lamb chops with fennel, and this food-friendly wine earned a silver medal at the 2015 Seattle Wine and Food Experience Wine Awards.
