Retired Walla Walla educator Doug Simmons relied on Les Collines Vineyard to produce this subdued and graceful Cabernet Sauvignon that’s fairing quite nicely. Aromas of oak spice and cherry wood readily offer up hints of black currant, dried cherry and chalkboard dust. Its lighter style allows for an expression of Rainier cherry and red currant, bringing pleasing acidity, understated tannins and a smooth finish. Those who enjoy Cabs from the Old World can find this on C Street at the historic Walla Walla Regional Airport complex.
