The month of June marks the second anniversary of Cave B’s tasting room in Woodinville, and this bubbly is reminiscent of the apple and pear orchards in Columbia Basin. Freddy Arredondo is a product of the Walla Walla Community College winemaking school, and early on, he also gleaned some tips on sparkling wine production from former Kobel vintner Allan Pangborn. Arredondo’s selection from 100 acres of estate fruit creates aromas of dusty apple blossom, fresh bread, Granny Smith apple and lime zest. Inside, the mousse creates an elegant mouth feel to present crisp flavors of Gala appla and Asian pear. Hints of Granny Smith apple and lime combine as solid acidity makes for nice length.
