The Phelpses cropped the fifth vintage of Cab Franc from their Salmon Safe site to 2.5 tons per acre, which allowed them to present an attractive version of this lesser-appreciated Bordeaux red. There’s nice toast, black currant, dusty cherry and sugared plum with menthol and earthiness to the nose. Inside, it’s a smooth entry of red currant and Bing cherry flavors backed by juicy tannins and lingering blueberry notes in the finish.
