David Volmut, who trained at Olsen Estates in Prosser, Wash., and Yakima Valley Community College, continues to focus on food-friendly Italian varieties at his winery on the Olympic Peninsula. His choice of whole-berry fermentation and 30% new oak using French and American barrels imparts aromas of tantalizing spice with smoky dark cherry, horehound, gaminess and minerality. The youthful palate brings flavors of Red Vines licorice and black currant with Earl Grey tea, bright acidity, assertive tannins and more minerality. These wines are available at Seattle-area wine merchants, grocery stores, shops on the Olympic Peninsula and the Sequim tasting room.
