Two clones of Pinot Gris — 152 (69%) and 146 — allow Florent Merlier to create a scintillating style of Pinot Gris that screams for gifts from the sea. It starts with a nose of flint, fresh-cut Gala apple and Asian pear and touches of dried lemon and dried ginger. The drink is bright and brisk with Granny Smith apple, lemony green tea and lime peel finish, laced throughout by Riesling-like acidity that would be perfect for oysters.
