The Hamiltons show their dedication to this Bordeaux variety that’s emerging in Washington state by developing a dry rosé with it from Gamache Vineyards — one of the state’s top growers of Malbec. Its salmon color leads to clean and bright aromas of Chelan cherry, dried strawberry and nectarine. There’s a scrape of toast on the entry that adds complexity to crisp flavors of cherry, white peach, kiwi and fresh-shucked sweet corn, backed by Granny Smith apple peel and a long trail of blood orange acidity.
