Jay Dewitt and Doug Harvey continue to pay respect to the legacy left in Dayton, Wash., by James Dumas (DOO-muss), who established one of the state’s oldest apple orchards on what is now home to this Walla Walla Valley winery and tasting room. Two of the three estate vineyards Dewitt farms — Minnick Hills Vineyard and Birch Creek Vineyard — come together for this luxurious Cabernet Sauvignon. Aromas of black currant, chalkboard dust, black licorice and gravel road lead to beautiful of dark fruit flavors of black cherry and huckleberry. Touches of chocolate, mint and baking spices add complexity and pleasing length to the structure of lush tannins and juicy acidity. This earned a gold medal at the 2015 Walla Walla Valley Wine Competition, and their wines are available at Puget Sound wine merchants such as Compass, Esquin, Pete’s Wine Shop, Wicked Cellars and Wine World.
