The father-son team of Juergen and Christian Grieb focus their Pinot Noir sparkling wine program on Marchant Vineyard in the Yakima Valley. Aromas of light strawberry, dried apricot, honeydew melon and starfruit include a bit of toastiness from the wine being on the lees. The pour brings delicate bubbles, making for enjoyable mousse and allowing for flavors of dried cherry, Bosc pear, apricot and unsweetened strawberry lemonade. Its bone-dry approach with nectarine skin and touch of minerality combine to make this remarkably food friendly, and suggested pairings include lamb chops with mint aioli, scallops with raspberry compote to smoked salmon. At this point, the best way to access their Blanc de Noir is at the tasting room/bubble house in Wapato or online.
