Best Buy! Longtime Washington winemaker Jon Zimmerman moved from Canoe Ridge Vineyard in time to take over at Apex Cellars in Prosser prior to the 2014 harvest. There’s a history of Precept using its estate Canyon Ranch Vineyard near Prosser for this dessert-style with this white Bordeaux grape, and this young example shows aromas and flavors of apricot glacée, honey, agave nectar and apple pie spice. Pleasing apricot skin bitterness in the finish helps to balance the residual sugar of 14%. Its softer acid profile will be best served well-chilled and offered with a plate of fruits and mild cheeses.
