Wine critic Paul Gregutt fled Seattle for bucolic Waitsburg, Wash., and his partners at Precept Wine paid tribute to the Walla Walla Valley town with the name for this young brand. They dubbed this blend for the Merlot (73%), Malbec (20%) and Mourvèdre from Precept vineyards Canoe Ridge, Doval and Alder Ridge, and they combine for a theme of blackberry, red currant, Montmorency cherry, rosemary and thyme with mouthfilling tannins and the telltale minerality of the Horse Heaven Hills. Enjoy with well-marbled meats and hearty stews.
