Of the nine red varieties established little more than five years ago at Spice Cabinet, Syrah ranks sixth in terms of scale at this fascinating 18-acre site overlooking Crow Butte Park along the Columbia River near Alderdale, Wash. Aromas of dark toast, coffee, Marionberry, black currant and touch of herbs serve as a precursor of what will be found on the palate. Its structure is smooth, round and chocolaty with mild tannins and notes of black olive and barrel spices in the finish. Suggested pairings include Moroccan-Spiced Grilled New York Steak, Smoked Lamb Shoulder and Dark Chocolate Tort.
