Steven Sealock has headed up the Pacific Rim Winemakers project in West Richland, Wash., since 2007, and this bottling reaffirms his rank among the Pacific Northwest’s top producers of Riesling. This off-dry expression scales just to the right of “medium dry” on the International Riesling Foundation’s Riesling Taste Profile, opening with lovely aromas of orchard blossom, apricot, pear, lime and mint. There’s a match on the palate as delicious acidity balances the juicy finish of a pear drizzled with honey and a dusting of ground nutmeg. This tier’s traditional target of 3% residual sugar will pair marvelously with cuisine native to regions that ring the Pacific Rim.
