This Woodinville, Wash., winery offers a delicious reminder that this white Bordeaux grape produces some of the world’s top dessert wines, and this historic vineyard on the warm Wahluke Slope had no problem getting this lot ripe. Harvest came at 37 Brix, and Rob Entrekin stopped the fermentation at 19% residual sugar, producing an aromatic profile of poached apple with clove, honeycomb and chalkboard dust. That sets the table for flavors of apricot jam, Gala apple and honeycomb as solid acidity gives it nice balance. Suggested pairings include fruit tarts, profiteroles, fresh berries, figs, pears and Stilton cheese.
