Adamant Cellars 2012 Winemaker’s Select Merlot, Walla Walla Valley, $42

Devin Stinger’s basement project in Portland soon got away from him not long after Y2K, so his Adamant Cellars earned a spot as one of the three inaugural wineries in the Port of Walla Walla’s incubator neighborhood. It graduated to its own small building on the corner of Cessna Avenue at the regional airport, and success has followed him and wife Debra. Their Merlot program combines fruit from Dwelley and Minnick Hills vineyards, and it opens with a smooth nose of black cherry, black currant, coffee, roasted coffee and cardamom. Supple tannins allow for rounded flavors of red currant, Bing cherry, cola and milk chocolate.
