He developed a complex aromatic profile of fresh-baked bread, cherry, tangerine and Pineapple Upside Down Cake. Inside, there’s a rich entry and full mousse mouth feel that speak of a slightly bigger style of sparkling wine resulting from 25 percent malolactic fermentation. It allows for a juicy and tasty structure of fleshy orchard fruit akin to white peach, apricot, Asian pear and Gala apple.
