Precept’s most prized Washington brand continues its tradition with Pinot Gris by blending estate fruit from Canyon Vineyard Ranch in the Yakima Valley with another recently acquired planting: The Benches in the Horse Heaven Hills. John Freeman’s work with Pinot Gris has more than doubled since 2012, but the attention to detail remains. Aromas of crisp apple, kiwi fruit and peach pick up buttery nougat and baking spices. A rich entry of peach, apple and Asian pear flavors awaits, backed by crushed filbert and honeydew melon. Its finish of lemon custard blanches any sign of the residual sugar (0.75%), allowing for pairings with oysters, shellfish, roasted pork loin or stuffed peppers.
