Snake River Valley native Martin Fujishin pulls from Skyline Vineyard — the bread basket of the Idaho wine industry — for his expression of this robust Bordeaux red grape. His use of 50 percent new oak, a combination of both French and American, creates lovely aromas of toast and chocolate with black cherry, vanilla, caramel and a hint of herbal brushiness. Firm tannins are loaded immediately on the palate, backed by ripe plum and dark chocolate. Finishing flavors of Bing cherry and red currant make for a big wine that should pair brilliantly with Herb-Roasted Lamb Chops. While the FFC wines have limited distribution in Idaho’s Treasure Valley, they are available through the winery’s website or at their Highway 55 tasting room in the Sunnyslope Wine District.
