Using a base of Merlot from Washington’s Wahluke Slope, these Woodinville distillers create a red vermouth that lives up to its name. The nose of Bing cherry, raspberry, mint and pine needles includes a hint of Appolo lakkrísbland – Icelandic black licorice candy. Those cherry and licorice notes follow through as flavors, presented with brightness and jamminess among the botanicals, a list of ingredients such as hibiscus, ginger, Tellicherry peppercorns, coriander, orange peel, lemon peel, cacao nibs and decaf coffee beans. Agave nectar boosts the residual sugar to 10%, making it a pleasant sipper.
