Willamette Valley winemaker Byron Dooley takes a portion of his Viognier from Rattlesnake Road Vineyard near the Columbia River in Eastern Oregon, freezes that lot for more than a month then presses it over the course of several days. He’s left with a delicate and delicious dessert wine that’s settled at 14% residual sugar. It doesn’t come off as cloying. Instead, the focus is on aromas and flavors of apricot jam, honey, rose petal and orange marmalade with a finish of golden raisins. Enjoy with a plate of light cheeses, orchard fruit and nuts.
