The Schmidt family moved to the Applegate Valley of Southern Oregon and began to establish vineyards in 2001, and this Cab hails from 3 1/2 acres in that initial planting. Cropped to 2.2 tons per acre, it shows beautiful aromas of black cherry, blackberry, dark chocolate, chalkboard dust, forest floor and sweet tobacco. There’s a match on the palate as firm tannins provide good grip, backed by lingonberry, coffee and milk chocolate. Suggested pairings include the family’s recipe for Red Wine-Braised Beef with Peppercorn Cream Sauce.
